Adjunct Faculty
Susan Bridle, PhD, is a consultant at Healthy Food Strategies, where she collaborates with partners to bridge research, policy, and practice in support of healthy food access and sustainable food systems. Her recent initiatives include a USDA-funded program to develop institutional markets for plant-based proteins and legume crops, and a RWJF-funded analysis of how U.S. hospitals utilize their community benefit resources to improve healthy food access. Current projects include a collaboration with schools in Sinaloa, Mexico for experiential learning about food systems, healthy weight, and environmental sustainability. Susan is the lead author of numerous articles and educational resources on these topics and is currently writing a book titled Beans! How to Feed 8+ Billion People on a Scorching Planet. As adjunct faculty at the University of Denver, she teaches courses on global food and nutrition security and green economy strategies.
